It is a slang version of the words “sure enough’. There was also a movie called The Last Dragon about a young man who idealizes Bruce Lee and he ends up fighting a guy by the name “Sho ‘Nuff”

It’s a shortened version of “sure enough”. I don’t know the actual origins of the phrase, however my guess is that someone wanted to get sure enough out even faster.
