1) I usually have a small lunch, but I always have a big dinner.

They all mean the same thing. The transition words: “but,” “although,” and “however” are all contrasting transition words. Which sentence you wish to use is your own preference.
By the way, #3 should be: “I usually have a small lunch; however, I always have a big dinner.” (#3 should be one sentence)
