When do you use the words talk and speak in a sentence?

Sometimes I get confused when to use the words talk and speak. I know they are somewhat synonymous but I need clarity.

eg. The man went to the sales conference to hear the director ‘talk’ about commission.

eg. The man went to the sales conference hear the director speak on ways to get more commission.

It is one of those words that you have to write out and when you read it back it either fits well or doesn’t.

In most cases, you can use either one in a sentence. There are some situations where only one is possible. For example:

I speak Portuguese (not I talk Portuguese)
