Would it be correct to write today’s date as 7/17/7?
We are having a conflict about this at work. Does the 0 need to be included in the year or is this acceptable?

Well, I think if you are going to say that 07 is acceptable, you would have to say 7 is as well. The 0 offers no more clarification for the date then without it. The problem here would be that most people might think that was a typo (because we usually write 07 or 2007).
We write the date so we can look back and be aware of when the document (or what have you) came from. If you leave out any information – it could be confused at some point in the future (Say in the year 2108, a document that simply said 7/17/07 would not seem as clear.)
I would just stick with 2007.
