Because English was formed much later than many other languages, and so instead of starting out from scratch with a whole new language, english was based off of latin and greek so that people could easily pick up the english languages, just from their knowledge of latin and english.
However, not all words (as in those that are in the dictionary) are of greek and latin roots. For example: “Doh,” as in what Homer Simpson says when he is angry, was recently added to the dictionary as a real word.

Latin words are part of the English language because of the Normans invaded and conquered England in 1066. The Normans spoke an early version of French, which was descended directly from Latin.
Norman French became the language of government, law, religion, and the nobility in England, while the peasants still spoke mostly Anglo-Saxon/Old English, a Germanic language.
The languages intermixed over the next few hundred years until by the 14th century or so, you had Geoffrey Chaucer writing The Canterbury Tales in Middle English.

Some of them have Latin as their base. Latin and Greek were the languages of learning for centuries. Most European languages are Indo-European in origin, and derive, ultimately, from Sanskrit.
