That’s a difficult call. I guess I would suggest the following statement: “I remember that he said that.” At least I know my way is grammatically correct. Technically, I think”I remember his saying that” is correct–his just shows possession of the action. However, it is awkward, so I like “I remember him saying that” better.

I remember his saying that goes you can kill two birds with one stone. That’s the only way the second one makes sense.

When using “his” you are using a possessive form, indicating ownership. Although what he said does belong to him, you are actually referring to the person and what was said, which is why “him” is grammatically correct.

i remember him saying that makes sense if that is the end of the sentence. the only way his would work is in something like

“i remember his saying, ‘that wont work'”

his means you’re referring to something he specifically said.

his is a possessive word as in his car, his house, his dog..etc. where as him is a noun either way they both seem unintelligent.
