It seems that there may only be one university offering a bachelor’s degree in Paleontology:

I looked at a number of sites and only came up with this one find. There may be more, but in my experience working in universities is that Paleontology is generally studied at a graduate level after first majoring in geology, anthropology, biology, zoology or botany. Good luck!
