1. The Maitre’d and his wait staff are in charge of the dining area. They prepare the tables, seat the dining guests, take food and drink orders, while making suggestions and explaining the menu. They are responsible for serving the food. They work to take care of the diner’s needs during the meal, and provide customer service to make the dining guest’s visit as pleasant as possible. Sometimes, while diners are waiting for their food, the wait staff will chat with the diners at their table to help pass the time.

2. The show centers on the lives of the chefs and how they cope with their responsibilities in the restaurant. The kitchen staff prepares and cooks the food for the restaurant. They maintain the kitchen, keep it clean and orderly, and well stocked. Many times, menu items must be prepared in advance earlier in the day, before being cooked to order during the evening dinner. For the chefs, speed, efficiency, and quality of the food is of paramount importance. Every dish must be of the highest quality or it should not be served.

On the show, the goal of each chef is to be able to run their own high end restaurant.

3. A person who chooses to work in food service operations must have the following characteristics:

— they must like food, and handling food in general

— they must like preparing food for others

— they must be able to follow directions

— they must be able to pay attention to details

— they must be able to work under pressure and time restraints

— they must be customer service orientated, and enjoy working so diners enjoy their meal.
