yes. It’s just pointing at more than one thing. It’s just plural to “I like this one.”

No, it isn’t good English. It’s like saying: “little small”. If the question were, “Do you like these?” you might ask, “which ones?” to which the proper response would be, “These” or “The ones on the left (or right)”, but not “these ones”.
“When the word ‘ones’ is preceded by a plural determiner (like these), we usually drop the ones and the determiner turns into a demonstrative pronoun: “Do you want these?”
It seems that it “should” be correct, because you can say “this one”, but when it becomes plural, “these” becomes both a noun and a directive. Confusing, huh? Such is English.
