So many, so very many. No one really can answer this as there are a lot of places in the world where people make their own cheese and each variety would be different. There are really three kinds of cheese though. Soft or unripened cheeses (cream cheese, cottage cheese), cured cheeses (Cheddar) which are covered with salt or salt water and allowed to cure/ripen. These are harder cheeses than the unripened cheeses and then there are cheeses with molds or bacteria added for texture or flavor. Some of these are added from the outside and allowed to work their way in and some are in the middle from the beginning. Swiss cheese gets its holes this way and the blue in blue cheese is a mold.
