A thermostat is a variable resistor (rheostat) connected to a device which measures the temperature being controlled. This detector can take many forms a mercury switch (as in a home thermostat), or a thermocouple (an electrical lead whose conductivity varies based on the temperature) which is used in clothes irons and most modern ovens. As the detector senses the desired temperature is reached, it cycles power to the heating elements (or the A/C unit in the case of a home thermostat).
Hope this helps.
